The best time to start working on portfolio pieces is junior year and/or when you start your major classes. Start looking for internships or writing positions at your university. That way, once you graduate, you have alot of different articles/videos/etc. for a potential employer to look at.
From what I’ve heard the best time is before graduation, sometime during junior year. That way you’re most likely in upperdivision classes doing projects related more closely to your specific major. I think the idea is to complete your portfolio by graduation so that you can then begin a job search with an impressive portfolio.
I think as long as you’re being published or producing your own original content then you should be adding it to a digital portfolio. Websites are so easy to make now and the resources are all available!
